Atkins - Marinated Queso Fresco

MARINATED QUESO FRESCO

1/2 cup extra-virgin olive oil
1 teaspoon minced fresh thyme
1 large garlic clove, pushed through a press
1/4 teaspoon crushed red pepper
1/4 teaspoon sweet paprika
1 pound queso fresco, cut into 3/4" dice
1. In a large, shallow dish, combine all ingredients except
cheese.
2. Add cheese and toss to coat. Let stand, covered, at
room temperature 2 hours before serving.
<i>Queso fresco</i>, which means "fresh cheese" in Spanish, is
similar to mozzarella in flavor but has a firmer texture. Several
brands are now available in the dairy section of most
supermarkets. This recipe can be made ahead and stored in the
refrigerator for three days.
