Atkins - Pomegranate, Pecan and Parsley Salad

POMEGRANATE, PECAN AND PARSLEY SALAD

2 bunches parsley, chopped (about 2 cups)
4 ounces salad greens (about 6 cups)
1 cup pecans, toasted and coarsely chopped
2 pomegranates, seeded (about 1 cup seeds)
3 tablespoons sherry vinegar
1 tablespoon Dijon mustard
1 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup plus 1 tablespoon olive oil
1. In a large bowl, toss parsley and salad greens together.
Sprinkle pecans and pomegranate seeds over greens.
2. In a small bowl, mix vinegar, mustard, salt and pepper
together. Slowly add oil and whisk until combined. Serve
salad with dressing on the side.
Pomegranates are garnet-colored autumn beauties that
represent good fortune and fertility. When purchasing, pick large
fruits, which are juicier. Wear gloves to remove the pomegranate
seedstheir bright red juice will stain skin and clothing.
