Atkins - Shrimp Stuffed Eggs

SHRIMP STUFFED EGGS

Net Carbs: 0 grams
1 dozen large eggs, hardboiled, peeled, halved, yolks
reserved
6 ounces shrimp, boiled, peeled, chopped fine
1/2 cup mayonnaise
1 tablespoon fresh chives, chopped
1/4 teaspoon celery seed
salt and freshly ground black pepper
1. In a medium bowl, mix yolks, shrimp, mayonnaise,
chives, celery seed, salt and pepper to taste. Fill whites
with shrimp mixture and refrigerate covered in plastic
wrap for 1 hour before serving.
Shrimp makes stuffed eggs a bit more elegant.
