Atkins - Spring Greens with Classic Vinaigrette

1/4 cup red or white wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper (preferably freshly ground)
3/4 cup extra-virgin olive oil
6 cups spring salad mix (mesclun)
1. In a small bowl, whisk together vinegar, mustard, salt
and pepper. Whisk in the oil in a slow, steady stream
until completely incorporated.
2. Pour 1/3 to 1/2 cup dressing over salad mix; toss well to
coat. Refrigerate remaining dressing.
This recipe provides enough dressing for 16 cups of salad.
Leftover dressing may be refrigerated for up to five days.
