Greek Style Garbanzo Salad

Greek Style Garbanzo Salad

Ingredients Directions
1-1/2 cups cooked (1/2 cup dry) or 1 can (15 oz.) garbanzo beans, drained
1/2 cup red onion, thinly sliced
1/2 cup tomato, diced
1/2 cup green bell pepper, chopped
3 Tbsp. (or to taste) rice vinegar or apple cider vinegar
2 Tbsp. lemon juice
2 tsp. olive oil
1–3 Tbsp. garlic, minced
2 Tbsp. fresh parsley, chopped
Salt and pepper to taste
Combine all ingredients in a large bowl.
Let marinate at room temperature several hours then refrigerate.
Makes 4–6 servings.
