You cook a lot of his meals correct? Just cut out a lot of the breads. For example, you could make a meal a lightly seasoned chicken breast with veggies, maybe beans or something else. Skip the baked potato.
We also have about 1000 recipes in our Atkins diet section, and all of them are low in carbs. You may want to give those a try.
Since he lifts weight he should also consider a low calorie protein shake to supplement his routine and eating habits.
