2 1/4 cups blackberries
1/3 cup granular sugar substitute
1 teaspooon freshly grated orange rind
1 cup buttermilk
1. In a medium saucepan, bring blackberries, sugar
substitute, 2 tablespoons water, and orange rind to a
boil. Reduce heat and simmer, covered, for 15 minutes,
stirring occasionally, until berries break down.
2. Place berry mixture in a food processor. Process until
smooth. Press through a fine strainer into a bowl. Stir in
buttermilk. Chill in refrigerator 1 hour or until cold.
3. Pour into an ice-cream maker and run according to
manufacturer's directions. Transfer to a bowl and freeze
2 to 3 hours before serving.
To balance the intense flavor of blackberries, we added
buttermilk, making this sorbet more like a sherbet. This recipe
can be doubled easily. If fresh blackberries aren't available,
frozen ones work equally well. You will need an ice-cream
