Atkins - Chocolate Pancakes

CHOCOLATE PANCAKES

1 cup Atkins Quick Cuisine Bake Mix

2 tablespoons unsweetened cocoa powder
6 tablespoons granular sugar substitute
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 eggs, beaten
3 tablespoons melted butter
2 teaspoons chocolate extract
Vegetable oil spray
1. Whisk bake mix, cocoa powder, sugar substitute, baking
powder and salt. Add milk, eggs, butter, and extract; mix
until smooth. Let batter rest 5 minutes.
2. Heat a large nonstick skillet over medium heat; lightly
coat with vegetable oil spray. Use 2 tablespoons batter
per pancake. Cook until small bubbles appear at edges,
about 3-4 minutes; flip and cook 30-45 seconds more.
Finally, a pancake for chocolate lovers! Try serving with sugar
free raspberry preserves and a dollop of whipped cream. Or, for
true chocoholics, drizzle with sugar free chocolate syrup.
