Atkins - Chocolate Peanut Butter Cookies

CHOCOLATE PEANUT BUTTER COOKIES

Vegetable oil spray for baking sheet
3/4 cup Atkins Bake Mix
1 tablespoon cocoa powder
3/4 cup granular sugar substitute
1/4 teaspoon salt
1/3 cup unsweetened peanut butter
1/2 cup heavy cream
2 eggs, beaten
1 teaspoon vanilla extract
2 teaspoons chocolate extract
1. Heat oven to 375F. Lightly spray baking sheets with
vegetable oil spray.
2. Whisk dry ingredients in a bowl. Mix peanut butter,
cream, egg, vanilla and chocolate extracts until smooth.
Add to bake mix mixture; stir until blended.
3. Drop dough by tablespoonfuls onto greased baking
sheets. Smooth dough with fingertips and press cookies
with to flatten. Bake 8-10 minutes, until browned. Cool
on sheets 1 minute before transferring to wire racks to
cool completely.
A favorite flavor combo in a low carb cookie. Try adding 1/2 cup
low carb chocolate chips to make each bite even more
decadent.
