Atkins - Chocolate Walnut Crisps

CHOCOLATE WALNUT CRISPS

3/4 cup granular sugar substitute
1/4 cup walnuts
2 tablespoons Atkins Quick Quisine
TM Bake Mix
3 egg whites, from large eggs
4 tablespoons unsalted butter, melted and cooled to room
temperature
1 tablespoon unsweetened cocoa powder
2 teaspoons chocolate extract
1. Preheat oven to 400 F. Line a baking sheet with a silpat
mat (available at most baking shops)
2. In a food processor, pulse sugar substitute, nuts and
bake mix and until finely ground, about 45 seconds. Set
aside.
3. In a small bowl, stir egg whites, melted butter, cocoa
powder and extract until smooth. Pour egg mixture into
the dry ingredients and pulse for 15 to 20 seconds,
scraping down bowl as necessary.
4. Drop cookie batter by teaspoonfuls onto baking sheet.
Spread each cookie with the back of a spoon to 2 1/2
diameter (should be very thin). Bake for 7 to 8 minutes,
until set. Remove cookies from baking sheet with an
offset spatula and cook on a rack; repeat with remaining
batter.
Studded with toasted walnuts, these crispy chocolate thins make
a tasty addition to any holiday cookie platter. Serve them
alongside steaming cups of peppermint tea.
