Atkins - Cinnamon Flan Cups

1 cup heavy or whipping cream
2/3 cup water
3 tablespoons low-carb praline sauce
1/2 teaspoon ground cinnamon
2 large eggs
1. Preheat oven to 325F. Whisk eggs in a large bowl. In a
small saucepan, bring cream, water, praline sauce and
cinnamon to a boil. Gradually whisk cream mixture into
eggs and return to saucepan.
2. Pour mixture through a strainer into four 6-ounce
ramekins or custard cups. Place cups in a large roasting
pan; carefully pour enough boiling water into pan to
reach halfway up sides of cups. Cover entire pan with
foil and bake 35 minutes, until custards are set in
centers. Let cups stand in pan at room temperature 15
minutes. Remove from pan and refrigerate, covered with
plastic wrap, for 2 hours before serving.
Rich, creamy and not too sweet, these individual desserts are a
perfect finale to a Spanish or Latin meal.
