Atkins - Lemon-Orange Cooler

LEMON-ORANGE COOLER

granular sugar substitute (to taste)
5 cups water, divided
1 cup freshly squeezed lemon juice (about 8 large lemons)
1/2 cup freshly squeezed orange juice (about 2 large
oranges)
1 tablespoon grated lemon zest (about 1 large lemon)
1 teaspoon grated orange zest (about 1/2 large orange)
1. In a small pot over high heat, dissolve sugar substitute
in 2 cups water, about 2 minutes.
2. In a large pitcher, combine sweetened water with
remaining cold water, lemon and orange juices and
zests. Mix well and chill.
This refreshing citrus cooler is much lower in carbs than
commercial versions. The addition of grated lemon and orange
zests gives this drink a pleasing, slightly bitter edge.
