Atkins - Maple Crepes with Whipped Cream

MAPLE CREPES WITH WHIPPED CREAM

1/2 cup Atkins Quick Quisine
TM Bake Mix
1/2 cup water
3 large eggs
1/4 teaspoon maple extract
1 cup heavy cream
2 teaspoons granular sugar substitute
Vegetable oil spray for greasing pan
Atkins pancake syrup, to taste
1. In a medium bowl, whisk bake mix, water, eggs and
maple extract until smooth. Let batter rest 30 minutes.
During this time, whip heavy cream and sugar substitute
using an electric mixer on high speed until soft peaks
form, about 3 minutes.
2. Spray an 8 nonstick skillet with oil spray and heat over
medium-high heat. Using 3 level tablespoons of batter
for each crepe, pour batter into center of skillet and
rotate pan to spread batter evenly. Cook 30 to 60
seconds until tiny bubbles appear on the surface. Flip
and cook on other side for an additional 15 to 30
seconds. Repeat with remaining batter, covering with
foil to keep warm.
3. Serve crepes with sweetened cream and pancake
syrup.
These crepes are a terrific brunch item and taste great with
Canadian bacon.
