Atkins - Pound Cake

POUND CAKE

Fat: 19 grams
Protein: 10 grams
Carbohydrates: 15 grams
Fiber: 4 grams
Net Carbs: 11 grams
14 tablespoons unsalted butter, at room temperature, plus
extra for greasing pan
1 cup granular sugar substitute
2 teaspoons grated lemon zest
2 teaspoons vanilla extract
1/2 teaspoon almond extract
5 large eggs
1 cup whole-wheat flour
1 cup Atkins Quick Quisine
Bake Mix
1. Heat oven to 325F. Lightly butter a 9-inch loaf pan; set
aside.
2. Cream butter, sugar substitute, zest, vanilla and almond
extracts with an electric mixer on medium speed until
fluffy. Add eggs and beat until combined. Add flour; mix
on low until just combined. Add bake mix; mix on low
until just-combined.
3. Spread batter evenly into prepared pan; bake until cake
tester inserted into center comes out clean, about 40
minutes. Transfer to cooling rack for 5 minutes before
removing from pan to cool completely. Slice and serve.
Heres a moist, low-carb version of the classic dessert and snack
cake. Customize it with flavorings, or fold in nuts or low-carb
chocolate chips, or serve it mounded with fruits, whipped cream
and other low-carb toppings of your choice.
