Atkins - Asian-Style Coleslaw

ASIAN-STYLE COLESLAW

Net Carbs: 3 grams
4 cups thinly sliced bok choy
1 large carrot, peeled
1 cup snow peas, strings removed, thinly sliced lengthwise
2 tablespoons vegetable oil
1 tablespoon Asian sesame oil
2 tablespoons rice wine vinegar
1 tablespoon soy sauce
2 teaspoons minced fresh ginger
1 teaspoon granular sugar substitute
Salt
1. Place cabbage in a large bowl; grate carrot into
cabbage. Mix in snow peas.
2. In a small bowl, mix oils, vinegar, soy sauce, ginger and
sugar substitute. Pour dressing over salad; toss to coat.
Season to taste with salt.
Bok choy, also known as Chinese cabbage, can be found in
most supermarkets. In this recipe, it is combined with snow peas
and carrot and tossed with an Asian vinaigrette.
