Atkins - Barbeque Pulled Pork

2 tablespoons vegetable oil, divided
1 cup sliced onions
1 pound boneless pork loin, thinly sliced
1/2 teaspoon dried oregano
Salt
Freshly ground pepper
3/4 cup low-carb barbeque sauce
1. Heat 1 tablespoon vegetable oil in a large skillet over
medium heat. Add onions and cook 5 minutes or until
lightly browned; set aside.
2. Sprinkle pork with oregano, salt and pepper. In a 2-quart
saucepan, heat remaining tablespoon of oil over
medium-high heat. Cook pork in batches until lightly
browned. Add onions to saucepan and pour in barbecue
sauce; mix well. Reduce heat to medium low and cook
20 to 25 minutes, or until pork is tender.
Made with our tasty sugar free sauce, this easy-to-prepare dish
can be ready in no time. Serve on low carb buns with a side of
coleslaw.
