Atkins - Bok Choy and Green Onions

BOK CHOY AND GREEN ONIONS

2 tablespoons soy sauce
2 tablespoons water
1 teaspoon granular sugar substitute
1 tablespoon canola oil
1 teaspoon sesame oil
1 bunch bok choy with leaves, cut crosswise into 2" pieces
and rinsed
4 green onions, chopped
3 cloves garlic, finely chopped
Crushed red-pepper flakes
2 tablespoons coarsely chopped peanuts
1. In a small bowl, mix soy sauce, water and sugar
substitute; set aside.
2. In a wok or large, deep skillet, heat canola and sesame
oils over medium-high heat. Add bok choy, green
onions, garlic, soy sauce mixture and pepper flakes to
taste. Stir-fry just until bok choy is wilted, about 3
minutes. Stir in peanuts and serve immediately.
Bok choy (Chinese cabbage), often sold in the produce section
of supermarkets, is juicier and milder tasting than regular
cabbageand it's low in carbs.
