Atkins - Breaded Scrod with Basil-Mustard Sauce

BREADED SCROD WITH BASIL-MUSTARD SAUCE

4 center-cut Scrod fillets (about 1/2 pound each)
1/4 cup fresh-squeezed lemon juice (about 1 lemon)
salt and pepper
4 slices Atkins Bakery Country White Bread
1 tablespoon chopped garlic
1 teaspoon dried oregano
1/3 cup olive oil plus 2 teaspoons olive oil
1 cup basil leaves
2 teaspoons Dijon mustard
1. Preheat oven to 400F. Put fillets on rimmed cookie
sheet. Pour juice over fillets and season with salt and
pepper.
2. In food processor, process bread, garlic and oregano
until fine crumbs form. With machine running, pour in 2
teaspoons of olive oil; process to combine.
3. Evenly divide crumb mixture and pat over fillets. Roast
12 minutes, until just cooked through.
4. While fish is cooking make the sauce: In a blender, pure
basil leaves with remaining 1/3 cup olive oil and a dash
of salt and pepper. Pour sauce into a small bowl and
whisk in mustard. To serve, spoon sauce around fish.
Crispy homemade breadcrumbs top tender fish in this foolproof
entre.
