Atkins - Chipotle Grilled Pork Tenderloin

CHIPOTLE GRILLED PORK TENDERLOIN

2 tablespoons chipotles en adobo
2 1/2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
2 garlic cloves, minced
1 1/2 teaspoons granular sugar substitute
2 (1-pound) pork tenderloin
2 tablespoons ground cumin
1 1/2 tablespoons canola oil
1 tablespoon salt
1/2 teaspoon pepper
1/3 cup chopped cilantro
1/3 cup walnuts, toasted and coarsely chopped
1. Heat grill pan or outdoor grill to medium-high. Combine
chipotles, lemon juice, lime juice, garlic and sugar
substitute in a blender; pure.
2. Rub pork with cumin, oil, salt and pepper. Grill 18 to 20
minutes, rolling the meat every 3 to 4 minutes to ensure
even cooking. Rest on cutting board 5 minutes.
3. Combine cilantro and walnuts in a small bowl. Cut pork
into 1/2-inch slices, drizzle with sauce, sprinkle with
cilantro mixture and serve.
A walnut-cilantro sprinkle gives perfect flavor balance to this
Mexican-inspired dish and tempers sweet-hot chipotles just
enough.
