Atkins - Crispy Parmesan Chicken Legs

CRISPY PARMESAN CHICKEN LEGS

1/2 cup grated fresh Parmesan cheese, divided
1/4 cup Atkins Quick Quisine
TM Bake Mix
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 large eggs
1 cup PageLink(Atkins Seasoned Bread Crumbs)
3 pounds chicken legs, cut into drumstick and thigh pieces
(about 5 drumsticks and 4 thighs)
vegetable oil for frying
1. Preheat oven to 350F. Line a baking sheet with foil and
fit with a rack. Set aside.
2. Combine half the cheese, bake mix salt and pepper on
a shallow plate. In a shallow bowl, beat eggs with a fork.
In another shallow plate, combine remaining cheese
with breadcrumbs.
3. Coat chicken pieces in bake mix mixture, followed by a
quick dip in the eggs, followed by a good coating of
cheese-crumb mixture. Place on a rack to dry for 15
minutes.
4. Heat about 1/2 oil in large skillet over medium heat. Fry
chicken in batches, skin-side-down first, for about 3
minutes per side. Drain on paper towels and place on
prepared baking sheet. Bake for 30 to 35 minutes until
chicken is cooked through.
Finger foods shouldnt be just for kids. Serve this kicked-up
version of fried chicken warm or chilled for lunches or picnics.
