Atkins - Cucumber, Tomato and Green Onion Salad

CUCUMBER, TOMATO AND GREEN ONION SALAD

1 English cucumber or two small regular cucumbers, peeled,
seeded and cut into 1/2 slices (2 cups)
3 tablespoons red wine vinegar
1 tablespoon granular sugar substitute
1/2 teaspoon salt
2 small tomatoes, seeded and coarsely chopped (1 1/3
cups)
4 green onions, chopped (1/2 cup)
1/4 cup fresh mint, chopped
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper
1. In a large bowl combine cucumber, vinegar, sugar
substitute and salt. Marinate for 30 minutes.
2. Add tomatoes, green onions, mint and olive oil. Gently
mix to combine and season to taste with additional salt
and pepper
A brief marinating time softens the texture of the cucumbers and
imbues them with flavor. This colorful salad goes with just about
any grilled or broiled entre.
