Atkins - Deli Delhi Chicken Salad

8 ounces chicken breast, from the deli counter
1 tablespoon mayonnaise
1 tablespoon sour cream
1 teaspoon curry powder
1/2 teaspoon ground ginger
1 teaspoon granular sugar substitute
1/2 small apple, chopped
1/2 celery stalk, chopped
2 tablespoons chopped walnuts
4 slices Atkins Bakery Country White Bread
2 Bibb lettuce leaves
1. Dice chicken breast into 1/3" cubes. In a bowl mix
mayonnaise, sour cream, curry powder, ginger and
sugar substitute until smooth. Add chicken, apple, celery
and walnuts. Mix until combined.
2. Divide salad on 2 bread slices; top with lettuce. Cover
with remaining bread slices.
For a change of pace and texture, try this exotic chicken salad. If
you are on induction or ongoing wait loss, omit the apple.
