Atkins - Green Beans Almondine

GREEN BEANS ALMONDINE

2 pounds green beans
4 tablespoons (1/2 stick) butter
3 tablespoons sliced almonds
salt and pepper
1. Trim beans on the diagonal. Steam until crisp-tender,
about 7-9 minutes.
2. In a large skillet over medium heat melt butter with
almonds. Cook 1 to 2 minutes until butter is browned
and almonds are fragrant. Add green beans to skillet
and toss to coat. Season to taste with salt and pepper.
This simple recipe works with almost any green vegetable. Be
sure to cook the almonds just until fragrant; nuts can burn very
quickly.
