Atkins - Green Beans Amandine

2 pounds green beans, trimmed on an angle
4 tablespoons (1/2 stick) unsalted butter
3 tablespoons sliced almonds
Salt and pepper
1. Bring a large pot of salted water to a boil. Add the green
beans and return to a boil. Cook until crisp-tender, about
3 minutes; drain.
2. Melt butter with almonds in a large skillet over medium
heat. Cook until butter is lightly browned and the
almonds are fragrant, 4 to 5 minutes. Add green beans
to skillet; cook, tossing, until hot, 1 to 2 minutes. Season
with salt and pepper to taste.
You can cook the beans up to two days in advance and store
them in the refrigerator. Cooking the almonds right in the butter
coats the beans, infuses this dish with a warm, nutty flavor.
