Atkins - Grilled Caesar Burgers with Garlic Toasts

GRILLED CAESAR BURGERS WITH GARLIC TOASTS

2 pounds ground chicken
1 1/2 cups Parmesan cheese, freshly grated
1/4 cup capers, lightly mashed
1/4 teaspoon freshly ground black pepper
6 slices Atkins Bakery
TM Ready-To-Eat Country White
Bread
2 tablespoons extra-virgin olive oil
1 large garlic clove, halved lengthwise
salt and freshly ground black pepper
6 tablespoons Caesar salad dressing
2 leaves Romaine lettuce, torn into bite-size pieces
1. Prepare grill a medium grill or heat broiler. Mix chicken,
cheese, capers and pepper until just-combined (do not
overmix). Form mixture into six patties and grill until just
cooked through, about 6 minutes per side.
2. While burgers are cooking, prepare garlic toasts. Brush
both sides of bread with garlic clove and oil and sprinkle
with salt and pepper. Grill bread until toasted, about 1
minute per side.
3. Serve each burger atop one slice of bread with dressing
and lettuce.
Ground chicken gets a serious makeover.
