Atkins - Grilled Eggplant with Mint Sauce

GRILLED EGGPLANT WITH MINT SAUCE

Mint Sauce:
1/2 cup whole-milk Greek yogurt
1/4 cup fresh mint, chopped
1 1/2 tablespoons sour cream
1 green onion, chopped (1/3 cup)
1 teaspoon chopped garlic
salt and freshly ground black pepper
Eggplant:
2 medium eggplants (about 2 pounds), cut in 1/2" slices
1/4 cup olive oil
salt and freshly ground black pepper
1. Preheat a high grill.
2. In a medium bowl, mix yogurt, mint, sour cream, green
onion, garlic and salt and pepper to taste. Set aside.
3. Toss eggplant with oil and season to taste with salt and
pepper
4. Grill eggplant until tender, about 5 minutes per side.
Serve with sauce.
Smoky eggplant topped with a cool, garlicky-mint sauce makes
a terrific first course or tasty side dish.
