Atkins - Grilled Fennel, Sausage and Tomato Pasta

GRILLED FENNEL, SAUSAGE AND TOMATO PASTA

1 large beefsteak tomato (about 1 pound), chopped (2 cups)
1 fennel bulb, cored, bulb cut into 1/4 inch slices, stalks
thinly sliced, reserve fennel sprigs for garnish (3 3/4 cups)
3 tablespoons olive oil, divided
1 1/2 tablespoons balsamic vinegar
3/4 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
6 ounces uncooked Atkins Quick Quisine
TM Pasta Cuts,
Penne
1 1/4 pounds Italian sausage, sweet or hot
1. Heat grill to medium.
2. In a large bowl, toss tomato, chopped fennel stalks, 2
tablespoonsoil, vinegar, 1/2 teaspoon salt and 1/4
teaspoon pepper; set aside.
3. Prepare pasta according to package directions. Drain;
return to pasta pot and toss with tomato mixture.
4. Place sausages on the grill and cook until sausages are
no longer pink in center, about 7 minutes per side. While
the sausage is grilling, brush fennel bulb slices with
remaining oil, salt and pepper. Grill until fennel is tender,
about 4 minutes per side.
5. Cut sausage into 1/3 inch slices. Coarsely chop the
grilled fennel. Add sausage and fennel to the pasta
mixture and gently toss to mix. Garnish with fennel
sprigs and serve hot or at room temperature.
Fennel is the star of this recipethe bulb is grilled, the stems are
chopped fresh and the sausage itself is seasoned with fennel
seed.
