Sorry to hear about your knees. I know how it feels after having a torn ACL and torn meniscus on the same knee. Pool should help I hope. Have you considered an elliptical machine for cardiovascular exercise? It is by far the easiest on the knees of all the gym equipment you are likely to see.
I gain all my weight around my gut too. Part of being a guy I guess
