Atkins - Hearty Sausage-Vegetable Strata

HEARTY SAUSAGE-VEGETABLE STRATA

1 pound mild sausage
6 slices Atkins bread, cut into 1/2 inch cubes
1 cup cooked broccoli florets
1 cup cauliflower florets
1/2 cup cooked baby carrots
8 eggs
1 cup cream, mixed with 1/2 cup water
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 ounces (1 1/2 cups) shredded Cheddar cheese
1. Remove sausage from casing and brown in a large
nonstick skillet. Transfer to paper towels to drain. Spray
a 13 9 baking dish with nonstick cooking spray.
Combine sausage, bread cubes and vegetables. Pat in
an even layer in prepared dish. Mix eggs, cream
mixture, mustard, salt and pepper. Pour over vegetable
and bread mixture. Sprinkle with cheese. Cover with
plastic wrap. Refrigerate 4 hours or up to overnight.
Heat oven to 375°. Bake strata 40 to 50 minutes, or until
knife inserted near the center comes out clean.
Strata are savory, baked bread puddings, held together with
cream and eggs. With Atkins sliced bread, bread puddings are
possible again.
