2 tablespoons oil
1/2 onion, thinly sliced
1 package (1 pound) sauerkraut, rinsed and drained
4 cooked hot dogs, sliced
2 cans (14 1/2 ounces each) reduced-sodium beef broth,
plus 1 can water
2 teaspoons mustard
1 tablespoon granular sugar substitute
1 bay leaf
Salt and pepper
1. Heat oil in a medium soup pot over medium-high heat.
Add onion and cook 5 minutes, until softened. Stir in
sauerkraut, hot dogs, broth, water, mustard, sugar
substitute and bay leaf.
2. Simmer 5 minutes for flavors to blend. Remove bay leaf.
Add salt and pepper to taste.
There are many versions of Hot Dog Soup, a favorite with kids
of all ages, and ours has it all: hot dogs, sauerkraut and
mustard. Slice the hot dogs thinly, especially when serving
