Atkins - Italian Sausage and Peppers

ITALIAN SAUSAGE AND PEPPERS

1 tablespoon olive oil
1 pound sweet Italian sausage
1 pound hot Italian sausage
1 small red onion, cut into 1-inch wedges
4 garlic cloves, smashed with the side of a knife and peeled
1 red bell pepper, cut into ½-inch strips
1 green bell pepper, cut into ½-inch strips
1 (14 ½-ounce) can whole peeled tomatoes
Salt and pepper
1. Heat oil in a large saucepan or high-sided skillet over
medium-high heat. Add sweet sausage and hot sausage
and brown on all side, 5 to 7 minutes.
2. Reduce heat to medium and add onion and garlic. Cook
until vegetables are softened, about 3 minutes. Add red
pepper, green pepper and tomatoes, bring to a boil and
reduce heat to medium-low. Cover partially and simmer
for 10 minutes.
3. Uncover and continue to simmer, stirring occasionally,
until sauce thickens, about 40 minutes. Season with salt
and pepper to taste and serve hot.
This classic Italian comfort food is simple to make, addictively
delicious and a great crowd-pleaser. In later phases, serve it in a
low-carb roll to evoke memories of summertime festivals and
boardwalk fare.
