Atkins - Mackerel Fillets with Mustard-Rosemary Mayonnaise

MACKEREL FILLETS WITH MUSTARD-ROSEMARY MAYONNAISE

4 (8-10 ounce) mackerel fillets (or bluefish fillets)
2 garlic cloves
1/2 teaspoon salt
1/2 teaspoon dried rosemary leaves
1 tablespoon Dijon mustard
1/4 cup mayonnaise
1. Heat broiler. On a cutting board mash garlic with salt
until you have a paste. Add rosemary leaves to paste
and chop. Transfer to a small bowl and mix in mustard
and mayonnaise. Arrange fish fillets in broiler pan.
Spread evenly with rosemary-mustard mayonnaise.
Broil 5 inches from heat source until cooked through,
about 8 minutes.
Tasty, strong flavored mackerel holds up well to assertive
seasoning. This dish is for those who enjoy full flavored fish.
