Atkins - Manhattan-Style Creamed Spinach

MANHATTAN-STYLE CREAMED SPINACH

1 tablespoon butter
1/2 small onion, chopped
2 green onions, chopped
1/2 cup reduced sodium chicken broth
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon freshly ground nutmeg
2 packages (10 ounces each) frozen leaf spinach, thawed
and squeezed dry
1. In a medium skillet, melt butter over low heat. Cook
onion and green onions 5 minutes, until softened. Stir in
broth, cream, salt, pepper, and nutmeg. Bring to a boil.
Reduce heat to medium and cook 15 minutes, until
liquid is reduced to 2/3 cup, and is thick enough to coat
the back of a spoon. Chop spinach; add to sauce and
mix very well. Cook, stirring occasionally, 5 minutes,
until very hot.
In New York, this is a much-requested standard steak-house
side. One taste and you'll know why. Freshly ground spices
(pepper, nutmeg) make a big difference in this recipe.
