1/4 cup olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon grated lemon rind
1/2 teaspoon crumbled dried rosemary
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 pounds swordfish steaks (about 1" thick)
1. Mix olive oil, lemon juice, oregano, lemon rind,
rosemary, salt and pepper in a resealable plastic bag.
Add swordfish steaks; toss to coat. Marinate at room
temperature 30 minutes, turning occasionally.
2. Prepare a medium grill. Cook steaks about 5 minutes
per side for medium doneness.
Just 30 minutes marinating time at room temperature
