Atkins - Mexican Veal Sausages

MEXICAN VEAL SAUSAGES

1 1/2 pounds ground veal
2 green onions, finely chopped (1/3 cup)
2 tablespoons fresh cilantro, chopped
2 tablespoons green or red salsa
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil
1/4 cup green or red salsa for garnish
1/4 cup sour cream for garnish
1 lime, cut into slices or wedges, for garnish
1. In a large bowl, mix veal, onion, cilantro, salsa, cumin,
salt and pepper gently, until just combined. Shape into
four sausage shapes.
2. Heat oil in a large nonstick skillet over medium heat until
very hot. Cook sausages turning occasionally for even
browning, until cooked through, about 8 to 10 minutes.
Serve wrapped in heated low-carb tortillas garnished
with salsa, sour cream and lime.
Shaping the veal mixture like sausages makes for easy
wrapping in low-carb tortillas.
