1 cup PageLink(Atkins Bread Crumbs)
1/4 cup Parmesan cheese, grated
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 beef cubed steaks (about 4 ounces each)
1 large egg, beaten with 2 tablespoons water
olive oil for frying
1 tablespoon fresh parsley, chopped, for garnish
lemon wedges for garnish (optional)
1. Preheat oven to warm setting.
2. In a plate, combine breadcrumbs, Parmesan cheese,
oregano, salt and pepper.
3. Heat 1/4-inch oil in a large nonstick skillet over mediumhigh
heat. Prepare two steaks at a time, dipping steaks
in egg mixture, then coating with crumbs. Saut until
golden brown and coating is crisp, about 3 minutes per
side. Transfer to oven to keep warm while sauting
remaining steaks. Garnish with parsley and lemon
wedges (optional).
Although its more common to see pan-fried items made from
