Atkins - Mushroom-Shallot Mlange

1 1/2 tablespoons butter
1 tablespoons olive oil
1/4 cup finely chopped shallots
1 pound mixed mushrooms, cleaned, trimmed, and chopped
1 tablespoon red or white wine
1/2 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped fresh parsley
1. In a large skillet, melt butter in oil over medium-high
heat. Add shallots and sauté 3 minutes, until softened.
Add mushrooms and cook 10 minutes, until mushrooms
release their juices. Add wine, thyme, marjoram, salt
and pepper. Reduce heat to low; continue cooking 15
minutes, until mushroom mixture is almost dry. Stir in
parsley.
This versatile mix is known in classic French cooking as
duxelles. In addition to being a great-tasting side dish, its an
excellent addition to soups, omelets, and stews.
