Atkins - Pan-Fried Trout with Bacon

PAN-FRIED TROUT WITH BACON

1/4 cup stone ground cornmeal
1/4 cup Atkins Quick Cuisine Bake Mix

4 teaspoons chili powder
3 teaspoons salt
2 teaspoons black pepper
8 slices bacon
4 tablespoons peanut oil
4 whole trout, gutted
2 lemons, cut into wedges
1. Combine cornmeal, bake mix, chili powder, salt and
pepper in a baking dish. Lightly coat each fish in the
mixture, tapping to remove any excess.
2. In a large heavy skillet, fry bacon with peanut oil over
medium heat until crisp. Remove bacon and set aside.
3. Over medium high heat, fry fish for 4-5 minutes per side,
until golden brown and cooked through. Serve with
lemon wedges and two bacon slices crisscrossed or
crumbled over each fish.
A campfire cooking classic, this dish combines the smoky taste
of bacon with fresh fried trout.
