Atkins - Pasta with Broccolini and Tomato-Cream Sauce

PASTA WITH BROCCOLINI AND TOMATO-CREAM SAUCE

3 cups Atkins Pasta Cuts Penne
1 bunch broccolini or 1/2 bunch broccoli, cut into 2-inch
pieces
1 tablespoon olive oil
1/4 yellow onion, finely chopped ( 1/2 cup )
1 tablespoon tomato paste
1 1/4 cups heavy cream
4 ounces smoked provolone or mozzarella cheese, diced ( 1
cup )
2 ounces prosciutto di Parma or baked ham, cut into thin
strips ( 1/2 cup )
1. Prepare pasta according to package directions. During
last 5 minutes of cooking time, add broccolini. Drain and
transfer to a large bowl.
2. While pasta is cooking, prepare sauce: Heat oil in a
medium skillet over high heat. Saut onions until
softened, about 5 minutes. Add tomato paste and saut 2
minutes more, stirring constantly. Add cream and cook
until sauce has thickened, about 5 minutes.
3. Add pasta to sauce and cook until heated through,
about 3 minutes. Turn off heat and stir in cheese and
prosciutto before serving.
This light and pleasing main course can be on the table in 30
minutes.
