SAUSAGE AND PEPPERS OVER PENNE

1 tablespoon olive oil
12 ounces cooked andouille sausage, cut into 1/4" thick
slices
2 onions, thinly sliced
2 bell peppers (any color), seeded and cut into 2" by 1/4"
strips
8 ounces Atkins Penne Pasta Cuts
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1. In a large skillet heat oil over medium-low heat. Add
sausage and cook 5 minutes, until browned. With a
slotted spoon, transfer sausage to a bowl.
2. Add onions to skillet; cook 5 minutes, until lightly golden.
Add peppers and cook 12 minutes, or until tender.
Meanwhile, cook pasta according to package directions.
Drain and keep warm.
3. Add 1/2 cup water, salt, pepper and reserved sausage
to skillet. Stir well; toss pepper mixture with pasta.
Although this recipe calls for andouille sausage, which is
relatively hot, any sausage may be substituted. If using
uncooked sausage, prick it well all over, place it in a skillet with
1/4 cup of water and simmer 5 minutes, until cooked through.
