Atkins - Sauteed Winter Greens

SAUTED WINTER GREENS

1 bunch kale (1 pound), stems removed, torn into 2-inch
pieces
1 bunch Swiss chard (1 pound), stems removed, torn into 2-
inch pieces
2 tablespoons olive oil
1 small red bell pepper, thinly sliced
1 shallot, finely chopped
1/2 teaspoon salt
1/8 to 1/4 teaspoon red pepper flakes
1. Bring a large pot of lightly salted water to boil. Add kale
and Swiss chard; cook 3 minutes. Transfer to a colander
and drain well.
2. In same pot, heat oil over medium-low heat. Add bell
pepper and shallot. Cook until softened, about 5
minutes. Return greens to pot; add salt, and red pepper
flakes to taste. Saut until greens are tender, about 5
minutes.
You can use a variety of greens, such as kale, collard, mustard
or turnip, in this flavorful side dish. Purchase whichever greens
look freshest.
