Atkins - Shrimp Scampi

2 tablespoons unsalted butter
2 tablespoons olive oil
1 pound large shrimp, shelled and deveined
2 teaspoons chopped garlic
1/2 cup dry white wine
1/4 cup fresh parsley, chopped
1 1/2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
pinch red pepper flakes
1. Heat butter and oil in a heavy skillet over high heat until
foam subsides. Add shrimp and saut, stirring frequently,
until shrimp are pink and slightly golden, about 4
minutes. Add garlic and saut until aroma is released,
about 1 minute.
2. Add wine, parsley, lemon juice, salt, pepper and red
pepper flakes to taste. Bring to a boil, lower heat and
simmer to heat through. Serve immediately.
Lemon, wine and garlic are classic complements for shrimp.
This dish is a snap to prepare and is always a hit.
