Atkins - Simplest Turkey Gravy

SIMPLEST TURKEY GRAVY

Juices and drippings from turkey roasting pan
1 to 1 3/4 cups lower sodium chicken broth
1/2 cup water
 4 teaspoons ThickenThin not/Starch thickener
1 tablespoon heavy cream (optional)
Salt
1. Pour drippings into a gravy separator or glass
measuring cup; drain off and discard as much excess
fat as possible. Add as much broth as necessary to
equal 2 cups. Pour into a small saucepan, add water
and bring to a simmer. Whisk in thickener; simmer,
whisking frequently, for 4 minutes. Remove from heat
and whisk in cream. Taste, stir in salt if necessary and
serve.
You can also make this gravy right in the pan you used to roast
your turkey: Simply pour off as much excess fat as possible,
place the pan over medium heat on your stovetop and whisk in
all the ingredients.
