Atkins - Simple Tomato Salad

SIMPLE TOMATO SALAD

Fiber: 1 grams
Net Carbs: 4 grams
1 pound fresh, ripe tomatoes (any kind), sliced into wedges,
juices reserved
2 tablespoons chopped fresh parsley
1 tablespoon extra virgin olive oil
Salt and pepper
1. Combine tomatoes and reserved tomato juice, parsley
and oil in a mixing bowl. Gently toss, season with salt
and pepper and serve.
Make this side dish with the ripest tomatoes you can find and
good results are guaranteed.
