1 ounce cream cheese
1 tablespoon capers, drained and lightly crushed
4 slices Atkins Bakery Rye Bread, crusts removed
1 ounce smoked salmon (1 large slice)
1/4 small red onion, thinly sliced (1/4 cup)
freshly ground black pepper
1. Mix cream cheese with capers; spread on all four bread
slices.
2. Top two slices each with half the salmon, half the onion
and pepper to taste. Top each with remaining bread.
Cut each sandwich in quarters on the diagonal.
No tea would be complete without the classic smoked salmon
sandwich.
