Atkins - Spicy Meat Rolls

SPICY MEAT ROLLS

1/2 pound ground veal
1/2 pound ground beef
1/2 pound ground pork
2 tablespoons club soda
1/2 medium onion, finely chopped
1 tablespoon finely chopped fresh Italian (flat leaf) parsley
1 teaspoon Hungarian paprika
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 tablespoons olive oil

1. Combine veal, beef, pork, club soda, onion, garlic,
parsley, paprika, salt, and pepper in a large bowl and
mix well. With moistened hands, take 2 heaping
tablespoon of mixture and shape it into a 3 roll.
Continue making rolls until all the mixture is used. (You
will have 10 to 15 rolls.) Heat oil in a large, heavy skillet
over medium heat until it is very hot. Cook rolls in
batches, 12 to 15 minutes, turning frequently until
evenly browned and cooked through. Sprinkle with salt
before serving.
An Eastern European cross between meatballs and shish
kebabs, these meat rolls can either pan-fried or shaped onto
skewers and grilled
