Atkins - Spinach Cheese Bake

SPINACH-CHEESE BAKE

Fiber: 3 grams

unsalted butter for greasing baking dish
4 large eggs
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 packages (10 ounces each) frozen chopped spinach,
thawed, squeezed dry
1 container (8 ounces) whole milk ricotta cheese
1 1/2 cups sharp cheddar cheese, shredded (6 ounces)
4 green onions, chopped (about 1/2 cup)
3 tablespoons Atkins Quick QuisineTM Bake Mix
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1. Preheat oven to 350F. Butter an 8 square baking dish
and set aside.
2. In a large bowl, beat eggs, salt and pepper with a fork
until combined. Add spinach, ricotta, cheddar, green
onions, bake mix, parsley and dill; mix well.
3. Pour spinach mixture into prepared baking dish. Bake
45 minutes, until center is set and top is golden brown.
Allow dish to rest for 3 minutes before serving.
This simple spinach side is perfect for Sunday brunch or
anytime you need an easy entertaining dish.
