The meat is usually grilled or stir fried but it is not set in stone. I also grill veggies and smoke some of the meats I eat, I'm in my element this time of year. I have a ball putting things together outside for the family and I'm trying to find a way to be healthy without dieting rather changing what and the way I eat. The reason is I can not stay on any diet for every but I can change what and how I eat, does this sound reasonable?
I change up my exercise routine twice weekly but I only do circuit core training and power walking because of my age. Everything I do is from a standing position mostly crunches, pops, helicopters and curls. I want to stave off arthritis, maintain flexibility and tone but I want to stay way from bulk. I'm forced to take a long term view that's why I'm so careful about dieting to loose weight. I can loose the weight, I want to keep it off that's what I'm concerned about. I can see my pecks now and I'm 34 - 35 in the waist with a 44 inch chest at 190lbs. The 180 goal is within 5lbs of what I was in college but I was 18 then, that was 35 years ago In short guys I want to be fit and healthy, what's your best advise on how to get there from here?

You don't need to go on a diet, but in order to lose the extra weight and keep it off you may need to make a lifestyle change with your eating habits, similar to what you mentioned, with calories in mind. Diets are meant to be short term in nature, whereas the lifestyle change is meant to be something you keep up for the long haul of course. If you're interested we can show you how many calories you'll want to eat on average in order to achieve your weight loss goals and keep the weight off once you get there.
If you're dead set on eating exactly what you mentioned before, my concern is that there's very little protein in what you're eating...you're losing out on building and/or maintaining muscle.
Also be careful with how much fruit you eat, because fruit is loaded in sugar and too much fruit can have a negative effect.
