Make this by the truckload. Freeze leftovers in Ziploc(s), let thaw during day, then heat 'n eat! Then re-freeze, thaw, re-freeze, thaw. Easy & fun! (Copied this from my diet book, "The Cardiologist's Wife's Chocolate Too Diet, No Sugar, No Fat & Luscious." It's on Amazon.com.)
Cooking spray
3 skillets
3 20 oz (1.25 lbs) pkgs Fat-Free GroundTurkey
2 28 oz cans Crushed Tomatoes
3 medium onions, diced
Taco Seasoning Mix, 2 packets per pound of turkey
3 cans Dark Kidney Beans
Spray each skillet with cooking spray.
Sautee the turkey throroughly. (More effort is required stirring/separating ground-turkey “crumbles” than with high-fat, slippery ground beef.)
Lower heat.
Pour off all drippings. (If you couldn't find all-ff ground turkey, there'll be lotsa drippings.)
Add the crushed tomatoes, onions, and Taco Seasoning. Stir.
Add kidney beans, stir again, and let simmer for 5 minutes.
Per 4 oz serving: 210 calories
Serve with diced tomatoes, shredded lettuce, & torn-up fat-free cheese if desired. For that add 30 calories for each cheese slice.
