By my calculations, your body is burning roughly 2560 calories a day on its own. So if you wanted to lose 1lb week, you'd want to eat roughly 2060 calories a day. To lose 2lbs a week, you'd want to eat roughly 1560 calories a day.
I think the reason you lost so much weight so fast was water weight. If you stuck to 1900 calories a day you'd lose about 1-1.5 lbs a week of fat on average over the long run.
